You know that holiday song “Grandma Got Runover by a Reindeer”? Well, this soon to be grandma got runover by a turkey. On Thanksgiving day. I tired Really Hard to convince myself that giblet gravy was mostly Keto friendly (except for the flour), but probably not over a giant mound of stuffing. My family has a traditional holiday dish that we like to disguise as a vegetable called Sue & Mike’s Spinach Soufflé or as I like to call it “heart attack on a plate.” This might actually be keto friendly-ish, consisting of lots of cheese, some more cheese, a lot of eggs and butter and some spinach. In the spirit of full disclosure, the “cheese” called for is cottage cheese (2 pounds worth) and American cheese which is really more like a cheese type food product here in the Dairy State, but still, YUM! Alas, I was wholly unable to find any Keto redeeming qualities of warm apple pie with salted caramel topping and dulce de leche ice cream.
There were extensive injuries … to my pride, mostly, and recovery was slow. Just yesterday, I was finally able to muster the energy to boil a dozen eggs, make a scallion and goat cheese frittata and find the really good kind of smoked salmon for salmon fat bombs. I don’t supposed eating the salmon plain while occasionally swiping my finger through the bar of cream cheese counts as a “recipe” but that’s where I’m at at this point.
I’m thinking Christmas will be hard, too, what with all those visions of sugar.
Oh, plums. That next word is plums.
